Slow day

Sometimes when I have a slow day at work I use the extra time I have to experiment. Yesterday was one of those slow days. I was making cookies and decided to try a couple things out.

I made bunny sugar cookies


The ears are marshmallows cut in half on a diagonal then the cut side is dipped in pink sugar crystals. The nose is a pink jelly bean cut in quarters and the eyes are black jelly beans cut in half. The jelly beans were easy to stick down in the warm cookies. The ears didn't stick quite as easy as I thought they would but they did eventually stick to the cookie. I think I should have put a mouth on it too.

The other think I did with cookies was to bake them in a mini muffin pan. When they came out of the oven I pushed the center down to make a bowl shape. When they were cooled I filled them with some strawberry donut filling then dipped the top in melted chocolate for a chocolate covered strawberry sugar cookie. I had to sample one of them and they were D-licious.

Aren't the bunny cookies a bit labor intnsive for a commercial bakery? Yes. I know, just playing...The other "cookie" sounds fabulous - I like soft chewy cookies, is this soft and chewy and once the jelly is in the well of the cookie, how do you dip the top in chocolate without the filling falling out? Can you put lemon or raspberry filling the cookies, and then can I have a dozen? Please?

He is adorable! It is very hard to see a real bunny's mouth anyway. Your mini muffin pan idea is awesome! I have never seen that anywhere, not even on Pinterest. Wish I could taste it, yum!

I read your title wrong initially and thought it said 'snow day' That would have been bad...a slow day to experiment with cookies is much nicer!!

The bunny looks great...the other one you describe I think i will have a go at making!!
