Fresh eggs

 Amanda was visiting with her friend who's sister has chickens. She got a bunch of fresh eggs. Unwashed and not refrigerated. When I was at Amanda's house the one day she gave me some of the eggs.

I was a bit nervous about trying them. I don't know why because they are most likely safter than the ones I get int he grocery store. One morning I decided to scramble a couple of them for my breakfast.

Perfectly delicious.

Apparently as long as you do not wash the eggs they are good unrefrigerated for up to a month. Once you wash them though they need to go in the refrigerator.

I think that's because they have a protective coating on them, and washing them destroys it.

I had read that, but I've never had fresh eggs. That's neat.

We get our eggs fresh from a farm nearby. They are never refrigerated. Yours looks yummy!

Fresh eggs from "happy" chickens... I buy my eggs from a farmer, too.

OHHHHHHHHHHHHHHH AND THEY ARE SO YELLOW.
My daughter and son in law had local friends with chickens.
When their friends were relocating to a new home, M&G
kept the baby chicks in their garage til the friends were settled.

That's interesting information about the eggs. How lovely to have really fresh eggs. Yours looked as though they had rich yolks.

Farm to table is best. Less handling and packaging. If you get to know your farmer you will learn what the animals are fed and how they are taken care of. It's one of the perks of living in the country!

We always get our eggs from my brother or a local farmer. They are the best. Yes, unwashed eggs do not need to be refrigerated. Enjoy them!!

Ginny is right about the washing removes the protective coating.

Yes, you are right about the washing and storage.
Yummm, there is nothing like fresh eggs. My friend used to have chickens and we reaped the rewards of her efforts. Sure miss those.

Thats right Ann. Our yard guy brings me eggs every week and sometimes I find myself having to get rid of some of them. (Sad). I really enjoy them and you can see how rich the yolk is.

That information at the end of your post is fascinating Ann, thanks for sharing. Before I was married my family would get our eggs from the local farm every week, all unwashed :) There were wonderful!
