i am so glad you posted this because we had this salad the past two days and I could not remember where I got the recipe. i rarely do recipes i find on blogs, but I tried this. i have never in 76 years of life eaten and artichoke of any kind and had to ask for help to find it at walmart. bob liked it ok, but said he could do without it. I liked it but did not LOVE it, you already know i only love unhealthy food. I added cubed seriosly sharp cheese in mine,
Looks absolutely perfect for me, my husband not so much LOL I love artichokes any which way, and peppers and onions - oh hell, I love everything in that salad. What did you dress it with?
How can something so pretty be so healthy?
