Food prep

August 2nd and 3rd I had tons of ambition and a very productive weekend. I decided I would do a little food prep on that Sunday. I made some breakfast burritos. I kept one out and froze the rest. I forgot to get pictures before things were in the freezer so you just get pictures of freezer bags full of food. I discovered that the burritos were a little too much to eat all in one sitting. I cut these in half and that was perfect. One burrito = 2 breakfasts.

I also made some McGriddle muffins. These are made with pancake mix and then you add sausage, maple syrup and cheese. Seriously yummy and easy to pop in the microwave for a quick breakfast. One is usually enough for me.

I had also put together a casserole to have for dinner that night. That gave me about 5 meals altogether. Some of that went in the freezer and I didn't bother getting a picture.

On a side note, when we get slow at work everyone has been scrolling through their phone. To pass the time yesterday I decided to get some blog reading in from my phone. Comments were under my other google address so it says Ann Thompson but doesn't link to this blog. Some of you already know that but for those who don't, the Ann Thompson that left a comment on your blog was me. I'll do that from time to time just so everyone knows.

What a good idea to use the time to make all this food. Now when you're not up to it, you have an instant meal with no cooking!

Yes, that was a great idea to make things and freeze them. A great investment of time. That's neat that you sometimes have time to check things on your phone.

Cooking ahead is always a good idea. Nice variety there, too.

Back in the day (the 1990s, when my kids were little), make ahead meal prep was a HUGE deal. I never got into it much but once in awhile I did. It's a big time saver & saves a lot of money. Good for you in doing it for yourself, Ann! Love, Andrea xoxo

We do a lot of cooking to go in the freezer too. Making a big pot of spaghetti sauce and freezing in serving sizes is one of the best...and chili! Love those breakfast ideas too! Hugs!

Wow, you were a busy bee in the kitchen. All those breakfast meals will really help you get out the door for work. Good for you !!!
I guess I am more of a "Fly by the Seat of my Pants" type of cook since we are retired. I like having things done on my Own timing.
Or is it just being Lazy??
