Amanda was visiting with her friend who's sister has chickens. She got a bunch of fresh eggs. Unwashed and not refrigerated. When I was at Amanda's house the one day she gave me some of the eggs.
I was a bit nervous about trying them. I don't know why because they are most likely safter than the ones I get int he grocery store. One morning I decided to scramble a couple of them for my breakfast.
Perfectly delicious.Apparently as long as you do not wash the eggs they are good unrefrigerated for up to a month. Once you wash them though they need to go in the refrigerator.

I think that's because they have a protective coating on them, and washing them destroys it.
I had read that, but I've never had fresh eggs. That's neat.
We get our eggs fresh from a farm nearby. They are never refrigerated. Yours looks yummy!
