Food prep

 Usually on Sunday's I do some kind of food prep for the week. Sometimes I work on breakfast items that I can put in the freezer and other times I'll make a casserole that will cover several meals and also put a few in the freezer for later. 

On this particular day I was working on breakfast.

I made McGriddle muffins. These are made with pancake mix and you add sausage, cheese, maple syrup and I can't recall what else.

I also made breakfast burritos. I always put frozen potatoes, cheese, egg and sausage in them.

Dinner was an easy french bread pizza. I used half a loaf of French bread and ate one part and used the other for my lunch at work the next day.

Everything looks good and quick to heat up. Smart! I like them all. I've made egg cups (or tiny individual omelets). Just eggs, some kind of meat (sausage/bacon/ground beef/ham), shredded cheese, and anything else you want to add. Bake and they reheat in the microwave, too. :)
