I'm married to worlds pickiest eater. We have a limited menu and I've gotten very bored with food. On top of that I've been trying to eat healthier and lighter so I can shed a few of the extra pounds I've put on. Worlds pickiest eater is not real supportive of my quest for healthy eating. I'm putting my foot down and I'm rebelling. I'm going to eat healthy, light and what I want.
I found a recipe for Ultimate Greek Chopped Salad on The Garden Grazer. I had to try this salad and Saturday morning I went out and bought all the ingredients I needed to make it. The recipe didn't call for it but I added black olives. All I can say is I love this stuff. A small little bowl filled me up and it was totally delicious.
This has cucumber, roma tomatoes, red bell pepper, red onion, garbanzo beans and black olives. The dressing is red wine vinegar, olive oil and oregano. For the exact amounts you can follow the link above for their recipe.
The best part about this is that Wade won't touch it so it all MINE!!!!

looks good to me and i would like it, so would bob, no onions in mine, i would have to add onions on his plate since i don't eat them. the rest i love... it would be good with black beans to....

Yum, this sounds good. Good luck getting Wade to try, he might really like it if he did. My youngest was like this, but finally opened her palate and was surprised what she missed.
Oh, that looks GREAT! I love summer salads with all the produce that is available. Funny thing is that I despise lettuce salads--I always say they "make me sad." They are so boring...so void of nutrients. :(
Picky eaters are tough when you're the one doing the cooking. Love the salad and I'm glad it's all yours.

Should have gone for Greek olives - I'm not crazy about beans of any type but this looks like an exception - raw onions upset my digestive system but I eat them anyway!
my son would love this, but I would not. lol I'm trying to eat healthier and eating a lot of salads lately. our picky eater is hubby as well. he doesn't like vegetables. he will eat green beans and broccoli. glad you have that salad all to yourself. :)
My respect for Wade is growing by leaps and bounds. Garbanzo beans? YUK!!!!!!!!!!!
Everyone has to have something of their very own, so I'm also glad Wade doesn't like it. Although, it looks really good. I'm going to have to try it.

Looks like you have some mixed picky eaters here. Now are you not glad your serving it to us and it is all yours.
My friend is Greek and she makes that salad. Last years she made it and then she said as I was taking out the Olives.
Hey girl that is the best part of the salad. The Olives. Her friends are Greek and they said.
Oh I could cry look what she is taking out of the Salad. So I said do you girls want them. They said you should have them. So I am thinking. Your a good girl and like them or your Greek or you have some Greek blood in you.
So Greek ladies are very addictive to healthy Olives.
That looks absolutely delicious! I love salads like that with lots of stuff in them! Since Wade doesn't like it there's more for you.
I have a salad recipe similar to this that my husband won't eat either because of the garbanzo beans and the feta I put on it. Their loss! My hubby isn't picky though and he does all the cooking! Picky hubby should do all his cooking too or eat whatever you make. Just sayin!
