Sorry Charlie.

If you like tuna, you just might like this quick and easy tuna pasta salad.




 The recipe makes 2 servings and I had it for dinner 2 nights in a row. I really liked it. I suppose you could eat it hot or cold but the first night it was warm because I had just cooked the noodles. The second night I put it in the microwave for a minute and it was just as yummy.

I found this recipe in a Woman's World magazine

Zingy Tuna Pasta Salad
4 oz penne pasta
3 Tbs olive oil
1Tbs lemon juice
1 Tbs shallot (I used red onion because it was all I had)
1 5 oz can tuna, drained
2 Tbs sliced olives
Basil leaves

1. Cook pasta in large pot of boiling salted water. Drain; reserve
2. In large bowl, whisk oil, lemon juice and shallot; season to taste with salt and pepper. Add pasta, tuna and olives; toss until well coated. Divide pasta salad between two individual serving bowls. Garnish with basil leaves.

I'm sure this will be a regular over the summer since it's so easy to put together. Perfect for those nights when you don't feel like doing much cooking..

I make this for Bob but we use elbow, and mayo. he loves it.. onions, tuna, mayo and macaroni... this would be healthier without the mayo. he eats it cold or sometimes heats it. right now I am not eating pasta but I make it for him once in a while.

Tuna is so innocuous, you can add it to just about anything and it is - meh - but edible - and protein - and mercury ...I'm not a huge fan of canned tuna, can you tell LOL

Yummo! Looks good, Ann. I like "warm" salads, right after they're made, that are meant to be chilled. Potato salad being #1. I'm guessing it's terribly difficult to cook for one. I admire your tenacity in persisting. Lots of women alone resort to fast food if they're by themselves and that's certainly not the best option. Does working in a grocery store make it easier? Lots of grocery stores sell pre-made things now... much more than they used to. The meat department of our locally owned grocery store even sells pre-made meatloaves and other things, to cook at home.... as well as pre-made salads and other sides. Love, Andrea xoxo

Hurray!!! I am making this tomorrow! I have all the stuff! I am always looking for new ways to make canned tuna. And this one is so versatile. I cannot wait. I even have the shallot! But I do think red onion would be better and a bit milder.

With it just being me now, I don't like cooking. I try to make things that will last for several dinners. If it's easy then it's even better.

LOL, it only shows a little. I always used to buy the chunk light tuna but discovered that the solid white albacore is much better

I like warm and cold salads both. Wade always said potato salad tasted better than warm and he would be disappointed if I put it away without giving him some when I made it.
I don't know if working in a grocery story is easier but it is more convenient since if I need to pick something up I just do it before I leave work. The one advantage I have is that if I need celery or something like that where buying the whole thing is way too much, I can buy just a couple stocks from the deli. They always have some for the salads they make there.

I hope you like it as much as I did. Would you believe I have never had a shallot? I always have onions though and normally just the yellow onions. This time around I happened to have some red ones though.
